Kiwifruit Cranberry Fool
The kiwi cranberry fool makes an attractive dessert for any special occasion. Green kiwifruit and red cranberries make it ideal for holiday luncheons or dinners.
3/4 cup low-fat sour cream 3 tablespoons confectioners sugar
1/3 cup dried cranberries 1/3 cup orange juice
2 tablespoons confectioners sugar 1/2 teaspoon orange zest
1 1/2 kiwi, peeled and mashed with a fork 1 tablespoon confectioners sugar
2 fresh mint sprigs
2 eight ounce clear wine glasses
In a small bowl, blend sour cream with 3 tablespoons confectioners sugar. Reserve. Place dried cranberries in a small saucepan with orange juice and 2 tablespoons confectioners sugar. Gently cook over medium-low hear for about 5 minutes, or until the cranberries swell and the liquid thickens and reduces. Stir in the orange zest. Reserve, allowing to cool completely. Mix the mashed kiwi with one tablespoon confectioners sugar. Reserve.
Divide the sour cream mixture equally into three small bowls. Reserve two tablespoons of the cranberry mixture in a separate bowl. Add the remaining cranberry mixture to one bowl (1/3) of the sour cream mixture and blend. Reserve two tablespoons of the kiwifruit mixture in a separate bowl. Add the remaining kiwifruit mixture to one bowl (1/3) of the sour cream mixture and blend.
Divide the cranberry sour cream mixture evenly between the two wine glasses. Cover each with one tablespoon of the reserved kiwifruit mixture. Place half of the sour cream confectioners sugar mixture on top of the kiwifruit mixture in each glass. Cover each with one tablespoon of the reserved cranberry mixture. Cover each with the kiwifruit sour cream mixture.
Refrigerate until ready to serve (will become more firm upon refrigeration). Garnish with a mint sprig if desired. Serves two.
