Kiwifruit French Toast

1 egg

1/4 cup milk

1/4 teaspoon vanilla

Dash salt

2 kiwifruit, peeled and sliced 1/4 inch thick

4 slices cinnamon raisin bread

Powdered sugar

Maple syrup

In pie plate or shallow bowl, mix egg, milk, vanilla and salt until well blended. Place kiwifruit slices in a single layer between 2 pieces of bread. Place sandwich in egg mixture, turning once to coat both sides. Repeat with remaining kiwifruit and bread to form second sandwich. Heat griddle or non-stick pan over medium heat. Spray with non-stick cooking spray. Cook sandwiches, turning once, until golden brown on the outside and there is no evidence of uncooked eggs, about 3 minutes. To serve, cut sandwiches into quarters, sprinkle with powdered sugar and serve.
