Kiwifruit Pavlova


1 cup whipping cream

1 tablespoon sugar

6 prepared individual meringue shells or sponge cake cups

2 or 3 kiwi, pared and sliced

Beat cream until stiff peaks form. Fold in sugar, then spoon into meringue shells. Cut kiwi slices, in half; arrange over whipped cream. Serve immediately. (Kiwi contains an enzyme that breaks down cream.) Makes 6 servings.

Per serving, using sponge cake: 350 calories, 38.5 g carbohydrates, 4.9 g protein, 19.9 g fat, 276 mg cholesterol, 1.5 g fiber, 114 mg sodium. Calories from fat: 51.1%.
