
Mean Green Kiwifruit Peanut Butter Sandwiches
Kids, parents and teachers can make this fun, colorful sandwich in a matter of minutes.
This sandwich combines kiwifruit, bananas and peanut butter, making it a delicious and
nutritious lunch or afternoon snack.
1/3 ripe banana, cut into small chunks
4 tablespoons low-fat or not-fat cream cheese, room temperature
4 slices good quality pre-sliced whole wheat bread, toasted lightly
4 tablespoons creamy peanut butter, regular or reduced-fat
2 kiwifruit, sliced into eight thick rounds
Place the banana pieces and cream cheese into a bowl and mash together
with a fork until will blended. Alternately, the ingredients can be placed in a food
processor and pulsed until just blended. Spread banana cream cheese on one side of two
pieces of toast. Spread peanut butter on the remaining two slices of toast. Top banana
cream cheese toast slices with peanut butter toast slices, making two sandwiches. Cut each
sandwich diagonally in half, then in quarters. (Cutting the sandwich before adding
kiwifruit prevents it from slipping out.) Remove top toast quarters (peanut butter) from
the sandwiches and place one slice of kiwifruit on the bottom toast quarters (banana cream
cheese). Replace top slices, adding more peanut butter if necessary to hold kiwifruit in
place. Makes two sandwiches.
